at hoshi, our signature omakase restaurant within the luxurious one&only palmilla, the japanese chef – omakase will be the creative soul behind one of the most exclusive dining experiences in the resort.
this role is responsible for designing and executing a refined japanese omakase journey that blends authenticity, precision, and artistry. Working hand in hand with the executive chef, the japanese chef will craft daily tasting menus inspired by seasonality, premium ingredients, and a deep respect for japanese culinary traditions.
key duties and responsibilities
* curate and execute daily omakase menus highlighting premium seasonal ingredients and authentic japanese flavors.
* deliver an engaging and personalized dining experience for guests at the hoshi omakase counter.
* supervise and coordinate all kitchen operations related to hoshi, ensuring smooth and efficient service.
* source and manage high-quality ingredients, including premium seafood and authentic japanese condiments.
* train, guide, and inspire team members in japanese culinary techniques and cultural service etiquette.
* ensure strict compliance with fsms, haccp, and all one&only hygiene and safety standards.
* manage food cost, waste, and inventory to meet budget and sustainability goals.
* collaborate with the restaurant manager and sommelier to create pairing menus and elevate the guest journey.
* support marketing and guest engagement initiatives that celebrate japanese culture and cuisine.
