key duties and responsibilities
curate and execute daily omakase menus highlighting premium seasonal ingredients and authentic japanese-perunflavors.
deliver an engaging and personalized dining experience for guests at the hoshi omakase counter.
supervise and coordinate all kitchen operations related to hoshi, ensuring smooth and efficient service.
source and manage high-quality ingredients, including premium seafood and authentic japanese condiments.
train, guide, and inspire team members in japanese culinary techniques and cultural service etiquette.
ensure strict compliance with fsms, haccp, and allone&onlyhygiene and safety standards.
manage food cost, waste, and inventory to meet budget and sustainability goals.
collaborate with the restaurant manager and sommelier to create pairing menus and elevate the guest journey.
support marketing and guest engagement initiatives that celebrate japanese culture and cuisine.
key skills and competencies
proven experience in michelin-starred establishments or internationally recognized luxury dining venues.
mastery ofjapaneseculinarytechniques including sushi, sashimi, and omakase preparation,perunfood
exceptional guest interaction and communication skills.
strong leadership, organization, and mentoring abilities.
deep knowledge of japanese ingredients, culture, and dining traditions.
