工作职责:
* 协助厨房运营工作,确保符合集团餐饮指南、酒店餐饮标准及财务目标,助力门店整体运营成功;
* 协助编制及更新各部门运营手册;
* 通过技能多元化培养、多任务协同及灵活排班提升员工工作效率,以达成企业财务目标及宾客期望;
* 聚焦生产力提升,在合规范围内审慎管理水电能耗及人力成本,确保资源优化配置及所有设备能源高效利用;
* 积极接纳新技术与新设备,提升生产效率并简化工作流程;
* 持续探索创新菜品及工作方法,协助门店管理层实现营收及利润最大化;
* 参与菜单规划及剩余食材/边角料的合理利用,综合考量预计客容量、市场行情、菜品受欢迎程度及菜单轮换频率等因素;
* 监督食材制备、烹饪方式、菜品分量及摆盘装饰,确保严格遵循既定标准;
* 菜品装盘及上桌前,对成品进行试味与质量检验;
* 预估食材消耗量,协调食材及厨房用品的采购或申领工作;
* 制定并执行门店厨房的营养及卫生标准;
* 审核菜单、分析菜品配方,核算食材、人力及管理成本,并为菜单菜品拟定或建议定价。
工作要求:
* 至少2年国际品牌酒店的同岗位工作经验。
* 能吃苦耐劳,为人正直,有责任心。
* 良好的沟通能力。

responsibilities
* assist in the kitchen, contributing to the overall success of the outlet, in accordance with corporate f&b guidelines, hotel f&b standards and financial goals assist in the kitchen, contributing to the overall success of the outlet, in accordance with corporate f&b guidelines, hotel f&b standards and financial goals.
* assists in the preparation and updates of individual departmental operations manuals.
* maximises employee productivity through the use of multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests.
* focus attention on improving productivity levels and the need to prudently manage utility/payroll costs within acceptable guidelines ensuring optimum deployment and energy efficiency of all equipment.
* ensures new technology and equipment are embraced, improving productivity whilst taking work out of the system.
* continuously seeks ways to assist the outlet management to maximise their revenues and profits through innovative recipes.
* participates in planning menus and utilisation of food surpluses and leftovers, taking into account probable number of guests, market conditions, and popularity of various dishes and frequency of menu.
* observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner as per standard.
* tests cooked foods before plate-up and service.
* estimates food consumption and purchases or requisitions of foodstuffs and kitchen supplies.
* establishes and enforces nutrition and sanitation standards for outlet kitchen.
* reviews menus, analyzes recipes, determines food, labour, overhead costs and assigns prices to menu items.
preferred qualifications and skills education:
* college degree preferably specializing in hotel/restaurant management or culinary arts, or equivalent experience is required.
experience:
* minimum two years previous experience in culinary as assistant manager positions.
skills and abilities:
* requires a working knowledge of division operations.
* requires ability to operate computer equipment and other food & beverage computer systems.
* requires the ability to operate and utilize culinary production equipment and tools effectively.
* requires reading, writing and oral proficiency in the english language.
