role
the master sushi chef is responsible for delivering a refined, authentic, and personalized japanese culinary experience for amanvari guests. Through mastery of traditional techniques, deep knowledge of japanese ingredients, and refined aesthetic sensibility, this role leads the creation of omakase menus and sushi offerings that embody the philosophy of purity, balance, and respect for the product that defines japanese cuisine. This position demands precision, creativity, leadership, and an unwavering commitment to service excellence.
responsibilities
* master the art of traditional japanese knife skills (kiritsuke, usuba, yanagiba), ensuring clean and precise cuts of raw fish and seafood for sashimi, nigiri, and sushi.
* prepare a daily selection of traditional and contemporary sushi (nigiri, maki, temaki), emphasizing balance of flavor, texture, and aesthetic presentation.
* design and execute omakase menus of 7 to 12 courses, incorporating seasonal ingredients, traditional techniques, and carefully curated local elements.
* handle the cleaning, filleting, deboning, aging (jukusei), and freshness control of fish such as maguro, hamachi, saba, tako, ika, uni, and others.
* apply traditional techniques such as tsukemono (pickling), nimono (simmered dishes), sunomono (marinated dishes), and agemono (light frying).
* interact directly with guests during omakase service at the counter, explaining dishes and preparation techniques fluently and courteously in conversational english.
* adapt menus to dietary preferences, allergies, or special requests without compromising the authenticity of the japanese experience.
* supervise and train kitchen staff in japanese techniques, hygiene standards, knife handling, and the omotenashi (japanese hospitality) philosophy.
* participate in the creation of exclusive culinary experiences such as private dinners, themed events, and collaborations with guest chefs.
* explore creative fusions that honor japanese tradition while incorporating ingredients from the natural ecosystem of baja california sur.
requirements
* minimum 5 years of experience leading sushi bars or japanese kitchens in luxury hotels, fine dining restaurants, or michelin-starred establishments.
* formal training in traditional japanese cuisine (formal apprenticeship in japan or with certified itamae chefs highly valued).
* proven expertise in japanese knife handling, cutting precision, and presentation techniques.
* advanced conversational english required to communicate fluently and professionally with guests.
