Scopecreate, update, and maintain a high-quality beverage program.desing beverages menus oriented in deliver a constant, unique profitable and sustainable bars around the property.to ensure that peñasco barra as the main bar operates successfully and look after the bartenders operation of other hotel bars, in accordance with the standard of the hotel and are individually profitable and that all beverage menus are kept up dated.develop a training program for all food and beverage staff.work closely with director of bars/beverage manager and finance to ensure the all the vendors and brand contracts are compliance with rosewood policies.duties and responsibilities1.ensures that the beverage activities are aligned with the respective corporate strategy, and that the hotel actions have been implemented where appropriate.2.ensures the smooth operation of peñasco barra, delivering quality service under the standard of forbes, lqa and rosewood brand standard.3.oversees the beverage program in all the bars at hotel to ensure the evolution of the concepts and nonstop learning program for all bartenders and other associates related with the beverage program.4.in conjunction with the director of bars/beverage manager and bar consultant (if applicable) design a critical path/calendar to change the beverage offer twice a year.5.responsible for control of beverage program including recipes and progressive menu development.6.together with the director of bars, ensures that the signature bar remains successful and trendy until been one of the most famous bars in the region and the world.aligned with hotel policies, budget, beverage cost and sustainability.7.understand is well informed about capex, incomes, expenses, and budget.8.ensures that the signature bar is operated in line with maximizing profit while delivering on the brand promise.9.assists in the preparation of the annual business plan for food and beverage.10.manages costs proactively based on key performance indicators, works with the respective department heads as appropriate.11.ensures that all hotel, company and local rules, policies and regulations relating to financial record keeping, money handling and licensing are adhered to.12.coordinating upgrade reviews with director of bars/beverage manager13.ensures that all company minimum brand standards have been implemented, and that optional brand standards have been implemented where appropriate.14.monitors signature bar operation trough the week and to promote the bar.15.ensures that beverage essentials are introduced, implemented and consistently maintained.16.ensures that beverage division respond to the results of the consumer audit and to ensure that the relevant changes are implemented.17.ensures that bartenders and other beverage associates work in a supportive and flexible manner with other associates and departments, in a spirit of teamwork.18.ensures that all associates are up to date with the availability of seasonal and new products on the market.19.tastes and monitors the beverage products served throughout the operation, provides feedback where appropriate.20.support banquet where applicable according to business needs specially regarding to any beverage/bar operation involved.additional duties and responsibilities1.ensures that all associates deliver the brand promise and always provide exceptional guest service.2.spends time in public areas observing associate-guest interaction and talking with guests, works through department heads to coach associates in guest service skills as necessary.3.ensures that all guest and internal customer complaints are resolved in a quick and efficient manner.4.handle guest complaints, resolve and update glitches with the correct update in knowcross.5.participate in the host program, actively assisting to the host meeting.participate actively in appreciation cocktail,6.maintains positive guest and colleague interactions with good working relationships.7.assists in the preparation, implementation and update of the annual marketing plan, broken down as necessary by department.8.evaluates local, national, and international market trends, vendors and other hotel/restaurant operations constantly to make sure that the hotel's operations remain competitive and cutting edge.9.encourages department heads to look for marketing and public relations opportunities to increase awareness and ultimately business.10.create experiences for guests11.lead and maintain the program for guest bartenders for peñasco barra and when in property host the guest trough out the stay.ensure all guest bartender reservation details are correctly communicated.human resources- assists in the recruitment and selection of bartenders.ensures that department heads follow hotel guidelines when recruiting and use a competency-based approach to selecting their associates.
